Materials and Steps for Making Snake Dance Red Rock Yokan

Required Materials:

  • Red Bean Paste (Anko)
  • Agar-Agar (Kanten)
  • Sugar
  • Butterfly Pea Tea
  • Dried Fruits
  • Cranberry Jam

Steps:

Step 1: Volcano Mold Design
Sculpt your desired volcano shape using paper clay, and let it sit for 2-3 nights to harden completely.

Step 2: Mold Production
Place the completed volcano shape in the FORMART S Smart Vacuum Former, and use PET plastic sheets to make the yokan-specific molding mold.

Step 3: Yokan Preparation
Boil 100ml of water, add 4g of agar-agar and 20g of sugar, stirring until fully dissolved.

Stirring the yokan mixture in the pot with a spatula, preparing for the next step of the process.
Add 100g of red bean paste and continue stirring until bubbles form on the surface.
When the temperature drops to 70°C and has not yet solidified, pour part of the yokan mixture into the volcano mold and place it in the refrigerator to set.

Pouring liquid into the volcano-shaped yokan mold, preparing to complete the final step of the dessert.

 

Step 4: Ocean Base Preparation
Place a few dried fruits at the bottom of a glass cup, then pour the remaining yokan mixture into the cup to form a flat base.
Boil 300ml of water, add butterfly pea tea to create a blue tea liquid, stir in 1g of agar-agar and 30g of sugar.
Pour the butterfly pea blue tea mixture over the solidified yokan in the glass, forming a transparent layer that symbolizes the ocean.

Step 5: Dessert Assembly
Remove the solidified volcano yokan and place it in the center of the glass cup.
Pour cranberry jam over the top of the volcano to simulate lava flowing from the volcano’s crater.

Pouring red fruit sauce into the volcano-shaped yokan mold, finishing the decoration of the dessert.
